How To Cook: |

1. Clean and wash the leeks, peel the onion and potatoes and cut all up roughly.

2. Melt a little fat in a saucepan and gently fry the vegetables, stirring till they change color.
|
3. Add the liquid, with seasoning to taste, bring to the boil and simmer slowly for at least ˝ hour.
|
4. Meanwhile wash, clean and chop the chervil, and keep covered till required.
|
5. Sieve the vegetables, return them to the pan and boil for 5 minutes, then add the chervil and a knob of butter.
