Currant Rolls
(Krenten Bollen)
This is a favorite item at the Dutch "Koffietafel" or cold lunch.

What You Need:
  • 1½ pound flour
  • 1 teaspoon salt
  • ¾ oz yeast
  • 1 oz sugar
  • 2 tablespoons warm milk
  • 1 egg
  • ½ pint milk
  • 3 oz butter
  • ½ pound currants
  • 1 - 2 oz chopped candied lemon peel

  • How To Cook:
    1. Sieve the flour and salt into a bowl and warm.

    2. Cream the yeast with the sugar and add 2 tablespoons warm milk; make a well in the flour and pour in the yeast.

    3. Beat the egg, add the ½ pint milk and the butter and blend thoroughly.

    4. Add this to the flour, mix well and knead for 10 minutes. Add the fruits and knead again.

    5. Cover with a damp cloth and place in a warm place for 1 hour to rise.

    6. Divide into 16 small balls, knead into rounds and place on a greased baking sheet.

    7. Prove in a warm place for 15 minutes, and bake in a hot oven (450°F) for 20 minutes.

    8. Serve cold with butter.
