Flemish Waffles
(Gaufres A La Flamande)
What You Need:
  • 1 pound flour
  • ½ glass brandy
  • 8 whole eggs
  • ½ oz yeast
  • ½ pint cream
  • A pinch of salt
  • 2 oz butter
  • A pinch of sugar

  • How To Cook:
    1. Mix ¼ pound flour with the yeast, dissolved in a little warm water, and set to rise.

    2. Then work in the rest of the flour, with the salt and sugar, the eggs, slightly beaten, and the cream, which should have been boiled and to which the butter is added.

    3. Knead well and let stand for 2½ hours in a warm place.

    4. Heat and grease the waffle irons.

    5. The batter should be sufficiently liquid to spread of itself over the waffle irons.

    6. When evenly browned on both sides, sprinkle with sugar and serve very hot.
