How To Cook: |

1. Separate the eggs.

2. Melt the fat and stir in the flour, then add the milk gradually, and bring to the boil, stirring continuously.

3. Cool slightly, and add the cheese, seasoning and egg yolks one by one, beating well.
|
4. Fold in the very stiffly beaten egg whites, and put into a large greased fireproof dish.
|
5. Bake in a moderately hot oven (400°F) for about ½ hour, till well risen and brown.
|
6. Serve immediately, piping hot.
