1. Rub the butter into the flour and sugar and bind with the eggs.

2. You may not need to use both eggs, depending on the size of the eggs and the type of flour used.

3. The mixture should form a solid ball.
|
4. Divide into two and press one-half into a greased sandwich tin.
|
5. Mix together the almonds, sugar, beaten egg and lemon peel and spread over the mixture in the tin.
|
6. Shape the remaining dough into a round the size of the tin and press it on top of the filling.
|
7. Bake in a moderate oven (350°F) for 45 minutes.
|
8. Cool on a sieve before cutting.
