Leek Soup
(Porrettenzopp)
What You Need:
  • 5 leeks
  • 2 oz lard or margarine
  • 3 pints water
  • Salt
  • 4 pound potatoes
  • 1 cup cream or sour milk

  • How To Cook:
    1. Wash and chop the leeks and brown lightly in the fat.

    2. Add the water and salt and boil for 30 minutes.

    3. Add the raw potatoes, peeled and cut in cubes, and boil 20 - 30 minutes till cooked.

    4. Rub the soup through a sieve, reheat, and just before serving add the cupful of cream.

    TIP:
        If you use sour milk, beat it with a fork so that the curd is broken up and well blended.
