Peasant Bean Soup
(Bo'neschlupp)
What You Need:
  • 1 pound beans
  • Water
  • Salt and pepper
  • 1½ - 2 pound potatoes
  • 2 tablespoons or about 1½ oz flour
  • 1¼ oz cooking fat
  • 1 tablespoon vinegar
  • Sour cream (optional)

  • How To Cook:
    1. String beans and cut them into ½-inch pieces, pour boiling water over them, repeat two or three times and then strain.

    2. Put them into about 3 pints tepid water and bring to the boil, adding salt to taste.

    3. An hour before serving, add raw potatoes, peeled and cut into small cubes.

    4. Brown flour with cooking fat in a saucepan and stir until thoroughly blended.

    5. Add a little of the liquid from the soup and season to taste with pepper, salt and vinegar.

    6. Add this mixture to the soup a few minutes before serving and stir thoroughly.

    7. If desired, a cupful of sour cream may also be added.

    To Serve: 4 - 6
