Pork Feet In Breadcrumbs
(Pane'ert Schengsfe'ss)
What You Need:
  • Fresh or lightly pickled pig's trotters
  • 4 oz breadcrumbs
  • 1 onion
  • Salt and pepper
  • Fat for frying
  • 1 clove
  • Chopped parsley
  • 1 bay leaf
  • A little mustard
  • 1 leaf of celeriac
  • Horseradish cream

  • How To Cook:
    1. Wash the trotters, place in tepid water with the salt, pepper and celeriac leaf and spices, and boil gently for 2˝ hours.

    2. Cut each trotter in half and remove the bones.

    3. Mix the breadcrumbs, minced onion, salt and pepper.

    4. Dip the hot trotters in this mixture, and then fry in deep fat.

    5. Serve sprinkled with finely chopped parsley and mustard, together with a little horseradish cream.
