	1. Boil the potatoes in their skins and peel them at once, then while still hot pass them through a sieve one at a time.

	2. Mix with the eggs, salt and pepper, a little sugar to taste and the flour.

	3. Put some more flour on a pastry board, and when the potato mixture is cold form it into small cakes, roll lightly in the flour on the board and fry in hot fat.

	4. Alternatively, make one large cake, put into a greased tin and bake in a fairly hot oven (425°F) until brown.

	5. Sprinkle with parsley and serve hot with a little butter or with bacon.
