Baked Liver
What You Need:
  • 4 slices of calves' liver
  • 2 cooking apples, chopped, peeled and coarsely grated
  • A little flour
  • Salt and pepper
  • Butter for frying
  • A little cream or top of the milk
  • 1 large onion, chopped
  • 8 rashers of streaky bacon

  • How To Cook:
    1. Coat the liver with flour seasoned with salt and pepper and fry in the butter for a minute on each side.

    2. Remove from the pan and fry the chopped onion in the same butter.

    3. Place the liver slices in a fireproof dish, cover with the onions, place the peeled coarsely grated apples on top and arrange the bacon rashers neatly across the whole dish.

    4. Add a little cream or top of milk to the butter in the pan, heat and pour over the dish.

    5. Put in a hot oven (450°F) for 10 minutes, and then reduce the heat to moderate (350°F) and cook for 30 minutes.

    6. Serve with boiled potatoes.
