Buckwheat Porridge

The soup course in Denmark sometimes consists of a mixture like gruel, porridge or hot blancmange, usually served with fruit, jam or a spicy flavoring and sugar. Here is an example.

What You Need:
  • 4 oz buckwheat or groats
  • 1 quart milk
  • Cream

  • How To Cook:
    1. Cook buckwheat or groats slowly in milk for 1 hour or longer.

    2. Add a pinch of salt and some thick cream just before serving.

    3. Each person adds to the portion in his plate a knob of butter, a little sweet beer and some sugar and ground cinnamon to taste.

    To Serve: 4
