How To Cook: |

1. Do not peel the cucumbers unless the skin is tough.

2. Wash the cucumbers well, slice very finely, sprinkle with salt, put in a bowl, with a weighted plate on top, and leave for some hours or overnight.

3. Discard the juice, rinse off the excess salt and dry the cucumber slices in a cloth.
|
4. Make a dressing of vinegar, water, lemon juice, sugar and pepper and pour it over the cucumber; let stand for about ½ hour.
|
5. Serve as a side dish with fried meats, roasts and chicken, or use to garnish open sandwiches.
