Currant Squares
What You Need:
  • 4 oz butter
  • 2 small eggs
  • 4 oz granulated sugar
  • Grated rind of 1 lemon
  • 4 oz flour
  • 2 oz currants
  • 1 oz chopped almonds

  • How To Cook:
    1. Melt the butter until liquid but not hot.

    2. Whisk the eggs and the sugar together; add the grated lemon rind and melted butter and then the sieved flour, forming moist dough.

    3. Spread the mixture thinly on shallow baking trays.

    4. This quantity is sufficient to fill a tray measuring 12 by 10 inches 5-6 times.

    5. Sprinkle with the currants and chopped almonds and bake in a moderate oven (350°F) for about 15 minutes.

    6. When the edges are lightly brown, remove from the oven and cut immediately into small biscuits about 2 inches by 1 inch.
