Danish Christmas Cake
(Kransekage)
What You Need:
  • 1½ pound ground almonds
  • 6 egg whites
  • 1½ pound icing sugar

  • How To Cook:
    1. Mix the ground almonds and icing sugar and heat gently for about 5-10 minutes, stirring all the time.

    2. Let the mixture cool and mix in the egg whites (which should not be whipped).

    3. Put the mixture in a forcing bag fitted with a plain ½ - ¾ inch nozzle and pipe on to a greased baking sheet in a dozen or more rings of graduated sizes (the largest about 9 inches).

    4. Bake in a moderate oven (350°F) till pale golden brown.

    5. Put together whilst slightly warm, joining the layers with royal icing.

    TIP:
        Decorate with piped icing flags and a Santa Claus or similar figure, as available.
