Fish Djuvetch
What You Need:
  • 2 pound fish (cod, bass, sole)
  • Salt and pepper
  • ½ pound onions or leeks
  • 2 pound assorted vegetables, as available
  • A little fat
  • 1 oz rice
  • ¼ pint stock or water

  • How To Cook:
    1. Prepare the fish as required and cut it into slices.

    2. Chop the onions or leeks finely and fry them until they are soft and brown; add the rice and fry it lightly with the onions.

    3. Prepare and cut up the vegetables and add them to the rice and onion.

    4. Season and stir the mixture well and leave it cooking slowly for a few minutes.

    5. Put it in an earthenware dish, lay the slices of fish on the mixture and add the stock or water.

    6. Bake in a moderate oven (350°F) for about 1½ hours.
