What You Need: |

2 pound fish (cod, bass, sole)
Salt and pepper
½ pound onions or leeks
2 pound assorted vegetables, as available
A little fat
1 oz rice
¼ pint stock or water

How To Cook: |
|
|
1. Prepare the fish as required and cut it into slices.
|
2. Chop the onions or leeks finely and fry them until they are soft and brown; add the rice and fry it lightly with the onions.
|
3. Prepare and cut up the vegetables and add them to the rice and onion.
|
4. Season and stir the mixture well and leave it cooking slowly for a few minutes.
|
5. Put it in an earthenware dish, lay the slices of fish on the mixture and add the stock or water.
|
6. Bake in a moderate oven (350°F) for about 1½ hours.
