Flour Dumplings
(Melboller)
What You Need:
  • 2 oz butter
  • 3 oz flour
  • ˝ pint water
  • 2 eggs
  • 1 tablespoon sugar
  • ˝ teaspoon salt

  • How To Cook:
    1. Melt butter, stir in flour and cook, stirring continuously, for a few minutes.

    2. Add just over ˝ pint water and stir over a good heat until the mixture will come away from the sides of the pan, then remove from the heat and "work" the mixture for about 10 minutes.

    3. Add an egg, mix this in thoroughly, then add a second egg and finally add sugar and salt, mixing these in well.

    4. Drop the mixture 1 teaspoon at a time into boiling water and cook until the dumplings rise to the surface; drain in a colander, pour cold water over them to remove the surface stickiness and serve at once in the hot soup.
