What You Need: |

Herring
Salt
Egg
Breadcrumbs
Mustard
Flour
Butter, margarine or lard
Tomatoes
Onions
Parsley

How To Cook: |
|
|
1. Clean and bone the herrings, rub with salt and wipe with a cloth, then arrange them to look as though they were whole.
|
2. Cut 2 small slits in the skin of each herring, dip in seasoned egg and breadcrumbs; alternatively, coat the cleaned salted herrings with made mustard and dip them in flour.
|
3. Fry until light brown in butter, margarine or lard, keeping them a good shape.
|
4. Garnish with fried tomatoes and onions, sprinkle with chopped parsley and serve with potato salad.
