1. Line a fireproof basin with one pancake, and reserve one for the top.

2. Cut the rest into strips, mix with the minced ham, sour milk, seasoning and stiffly beaten egg white.

3. Put into the basin and cover with the remaining pancake, sprinkle with grated cheese, and bake in a moderately hot oven (425°F) for 10 - 12 minutes, then turn out.
