1. Sieve the potatoes while still hot, add 1 oz. of the butter and when this is melted, add the flour and salt and mix with egg and water to stiff dough.

2. Knead, roll out to ¼ inch thick and cut into 4-inch squares.

3. Place a stoned plum in the center of each, add 1 teaspoon sugar, damp edges of pastry and bring together to form a ball.
|
4. Place the dumplings in fast-boiling salted water for 5 minutes.
|
5. Melt the remaining butter and fry the crumbs until golden.
|
6. Strain the plum balls and serve them hot, sprinkled with the breadcrumbs.
