Porcupine Apples
(Aeble Pindsvin)
What You Need:
  • 3 large apples
  • ½ cup shredded toasted almonds
  • 2½ cups water
  • ¼ cup sugar
  • Whipped cream or custard
  • 2 tablespoons lemon juice

  • How To Cook:
    1. Peel the apples, then, starting at the blossom end, cut each in half and core it.

    2. Bring the water, sugar and lemon juice to the boil in a large shallow pan.

    3. Add the apples and simmer, covered, until tender, turning the pieces once.

    4. Arrange the apple halves, cut side down, on a deep serving dish.

    5. Boil the syrup in which apples were cooked until it is reduced to 2 cups.

    6. Meanwhile, tuck some of the shredded almonds into the rounded side of each apple half.

    7. Pour on the syrup, cool and chill.

    8. Serve with cream or custard sauce.
