Pork Loaf
What You Need:
  • 1 oz dripping
  • 6 oz rice
  • 1 onion
  • 4 green peppers
  • 12 oz minced pork
  • 1 small tin of tomato puree
  • Seasoning
  • 1 egg
  • 1 pint water
  • 2 oz breadcrumbs
  • 1 pint sour milk

  • How To Cook:
    1. Melt the fat in a pan, fry the finely chopped onion and mix this with the meat, seasoning, egg and breadcrumbs.

    2. Mould the mixture into an oblong shape and put it into a well-greased baking tin.

    3. Half cook the rice in boiling salted water.

    4. Put a layer of rice at either side of the meat, place a few slices of green pepper over this and then add another layer of rice, and season; continue in this way, making the last layer rice.

    5. Mix the tomato puree with the water and sour milk and pour this over the meat and rice.

    6. Cover with a lid over greased paper and bake in a moderate oven (350°F) for ¾ hour.

    7. Serve cut in slices, garnished with rice and peppers.
