How To Cook: |

1. Cook the potatoes and pass them through a fine sieve.

2. Add the flour, salt, egg and milk and work the mixture with the fingers into a paste.
|
3. Roll out to ˝ inch thick and cut into strips ˝ inch wide and about 2 inches long.
|
4. Cook in boiling salted water-when they float on top of the water they are cooked enough.
|
5. Put them on a hot dish with a very little butter and plenty of grated cheese.
|
6. Serve garnished with the bacon, cut into small squares and fried.
