1. Peel a firm green cucumber, slice very thinly, sprinkle with salt and leave for about an hour, then squeeze well in a cloth to extract the moisture.

2. Mix with vinegar and olive oil, add a few thin slices of onion, and sprinkle with paprika or pepper and leave to stand for 2 hours before serving.

3. A tablespoon of sour cream may be poured over the salad if pepper is not used.
