Sour Cream Pie
(Tejfeles Pite)
What You Need:
  • 1 unbaked 9-inch pie shell
  • 3 eggs, separated
  • ¾ cup granulated sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 cup seedless raisins, chopped
  • 1 teaspoon grated lemon rind
  • 1 cup sour cream

  • How To Cook:
    1. Start heating oven to moderately hot (425°F).

    2. Beat egg whites until stiff but not dry.

    3. Without washing beater, beat egg yolks until thick and lemon-colored; beat in sugar, cinnamon, cloves, salt.

    4. Fold in raisins, lemon rind, ½ cup sour cream, and beaten whites.

    5. Pour into pie shell.

    6. Bake for 15 minutes, then reduce oven temperature to moderate (350°F) and bake 30 minutes longer or until a silver knife inserted into the center of the pie comes out clean.

    7. Let pie cool to room temperature.

    8. Top each serving with a dab of remaining sour cream.
