Stuffed Cabbage Leaves
What You Need:
  • 8 - 10 large outer leaves of cabbage
  • 1 teaspoon chopped parsley
  • Stock
  • 6 oz raw meat
  • ˝ pint good brown sauce
  • 2 oz rice
  • Salt and pepper
  • 8 - 10 small slices fried bacon
  • 1 teaspoon tomato sauce or ketchup

  • How To Cook:
    1. Wash and blanch the cabbage leaves and leave them soaking in hot water for a few minutes to soften them.

    2. Mince the raw meat and mix it with the uncooked rice.

    3. Add the seasonings, tomato sauce and parsley, form the mixture into 8 - 10 croquettes and wrap a cabbage leaf firmly round each one.

    4. Pack them into a saucepan or casserole, cover with stock and simmer for 1˝ hours.

    5. Serve with the brown sauce poured round them and garnish with a slice of fried bacon on each cabbage roll.

    NOTE:
        Podvarack is an excellent accompaniment to this dish.
