Almond Soup
(Sopa De Amendoas)

What You Need: |

|
¼ pound sweet almonds
A pinch of sugar
2 bitter almonds
2 tablespoons butter
1 quart milk, scalded
Croutons
Salt

How To Cook: |
|
|
1. Blanch and peel the almonds, and grind to a paste, adding a little water, a few drops at a time, to keep the mass from "oiling."
|
2. Add a little of the hot milk to the almond paste, mixing with a wooden spoon, then sieve well, adding more milk as necessary.
|
3. Put the mixture in a double boiler and cook for 15-20 minutes, stirring constantly.
|
4. Add the remaining hot milk, season with salt and then with a little sugar and add the butter.
|
5. Lay the croutons in a hot tureen and pour the soup over.
