Apple Pudding
(Pudim De Macas)
What You Need:
  • 8 large cooking apples
  • ½ cup citron peel, finely chopped
  • 1½ cups sugar
  • ½ cup blanched and shredded pistachio nuts
  • ½ cup seeded raisins
  • ½ cup seedless raisins or sultanas
  • Juice of ¼ of a lemon

  • How To Cook:
    1. Core, peel and slice 5 of the apples.

    2. Add the sugar and just enough water to cook them; stew until tender, and then add the dried fruit, peel and nuts, stirring well.

    3. Core and peel the remaining apples and cut into thin rings; sprinkle the lemon juice over them and put half of them in the bottom of a buttered baking dish.

    4. Spread the cooked apples over them, and then put the remaining raw slices on top.

    5. Bake for ½ hour ill a moderate oven (350°F). Serve hot.
