Baked Fish With Port Wine Sauce
(Peixe Oporto)
What You Need:
  • 1 ˝ pound sea bream or any other suitable white fish
  • 1 oz butter
  • 1˝ gills port wine
  • 2 egg yolks
  • Salt
  • 1 tablespoon cream
  • Paprika pepper

  • How To Cook:
    1. Prepare the fish and season with salt and paprika.

    2. Bake it with the butter in a covered fireproof dish in a moderate oven (350°F) for 5 minutes.

    3. Add the port wine and continue cooking until the fish is tender 15 - 20 minutes.

    4. Strain off all the liquor from the dish and cook it quickly in a saucepan to reduce it a little.

    5. Cool, and beat in the egg yolks, add the cream and reheat very gently, but do not bring to simmering point.

    6. Pour the sauce over the fish and serve with Savoury Rice.

    To Serve: 2 - 4
