Chicken Soup
(Sopa De Gallinha)
What You Need:
  • 1 boiling fowl, cut up
  • 1 onion, finely chopped
  • 1 tablespoon salt
  • 2 tomatoes, skinned, deseeded and chopped
  • ˝ a garlic clove, finely chopped
  • ˝ cup rice
  • 2 carrots, diced
  • Pepper

  • How To Cook:
    1. Put the fowl in a large pan with 3 quarts water, bring slowly to the boil, add the salt and skim the surface of the water.

    2. Simmer for about 2˝ hours, add the remaining ingredients and continue to cook until the chicken is done.

    3. Skim the fat off the top. In serving the soup give each person a piece of the chicken.

    To Serve: 4 - 6
