Christmas Crullers

These are served with jam as a dessert or as an accompaniment to coffee and are popular at Christmas.
|
What You Need: |

|
4 egg yolks
1 tablespoon brandy
¼ cup caster sugar
1 tablespoon grated lemon rind
3 tablespoons butter
1½ cups flour
Deep fat for frying

How To Cook: |
|
|
1. Mix all the biscuit ingredients, stirring until well blended, and then chill the mixture.
|
2. Put the dough on a floured board, roll out thinly and cut into strips ¾ inch wide and 3 inches long, using a pastry wheel.
|
3. Cut a slit in the center of each strip and draw one end through the slit so that the strip is twisted and looks almost like a bow.
|
4. Fry the crullers in the hot fat until light brown, then drain well on absorbent paper.
