How To Cook: |

1. Cut the cod into pieces, season and place in a buttered fireproof dish.

2. Cover with buttered paper and bake in a moderate oven (350°F) 15-20 minutes.

3. Make a roux with the fat and flour; add the fish liquor and sufficient milk to make a good white sauce.
|
4. Cook the sauce slowly for 5 minutes, then add the white crabmeat to the sauce and spread the dark crabmeat on the fish.

5. Pour the crab sauce over the fish, cover with the grated cheese and breadcrumbs and brown well either in a hot oven or under the grill.

6. Garnish with parsley.
