1. Separate the eggs and whisk the whites until they are stiff.

2. Grease a deep sandwich tin with butter and sprinkle well with browned crumbs.

3. Sieve the flour, corn flour and baking powder together.
|
4. Add the sugar to the egg whites, and then add the yolks and the flour, etc.
|
5. Stir well, until thoroughly mixed, pour into the prepared tin and bake in a moderately hot oven (400°F) for 30 minutes.
|
6. Turn out and cool on a rack.
|
7. Cut the cake into three when it is cold and spread each layer with vanilla cream.
|
8. Coat the cake with a thin layer of jam, then arrange some large pieces of glace fruit on top and decorate with piped royal icing.
