How To Cook: |

1. Split the mackerel down their entire length, remove the backbones, heads and tails, then wash and dry the fillets.

2. Lay them in a dish and pour over them the mixed olive oil, lemon juice, onion juice, salt and pepper, covering well.
|
3. Let them marinade for 2 or 3 hours, turning occasionally, then drain and grill.
|
4. Serve sprinkled with parsley.
|
5. The marinating liquid may be heated and poured over the fish, or they may be spread with melted butter.
