Ham Dumplings
What You Need:
  • 4 cups breadcrumbs
  • 2 slices boiled ham, shredded
  • 1 cup scalded milk
  • 2 teaspoons butter
  • Salt to taste
  • 3 eggs, separated
  • Flour for rolling
  • 1 white roll or 2 slices bread
  • A few strips bacon fat

  • How To Cook:
    1. Combine breadcrumbs with scalded milk and let it stand for a few minutes to soften and cool.

    2. Add butter arid egg yolks and fold in stiffly beaten egg whites.

    3. Dice the roll or bread and fry in butter to make croutons.

    4. Combine croutons and shredded ham with first mixture and mix lightly.

    5. Shape into oblong croquettes, roll in flour and cook in fast-boiling salted water for about 10 minutes.

    6. Cook the bacon until crisp, drain and crumble.

    7. Use both bacon and bacon fat for topping.

    To Serve: 4 - 6
