Lithuanian Ravioli
(Kolduny Litewskie)
What You Need:
  • 2 medium-sized onions
  • Seasoning
  • Fat for frying
  • 8 oz noodle paste (see below)
  • 1 pound minced cooked lamb
  • Salted water
  • ¼ cup water
  • Melted butter

    NOODLE PASTE
  • 8 oz flour
  • ½ teaspoon salt
  • 1 oz butter or lard

  • How To Cook:
    1. Slice the onions and fry them, then mix with the minced lamb, water and seasoning.

    2. Make the noodle paste, roll it out thinly and cut into 4-inch rounds.

    3. Place some of the meat mixture on each round, fold over and seal the edges.

    4. Boil in salted water for a few minutes, until they float to the top, then lift out and serve immediately with melted butter.

    TO MAKE THE NOODLE PASTE:
    1. Mix flour and salt, and rub in butter or lard.

    2. Add a beaten egg and enough milk and water (or water only) to make very stiff dough.

    3. Knead until smooth and divide into portions for rolling out.
