Liver Mounds
What You Need:
  • 6 turkey or large capon livers, soaked in milk for about 2 hours
  • 3 eggs, separated
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 stale white roll, moistened in milk, and mashed, or equivalent in breadcrumbs
  • ˝ medium onion, grated and sauteed in butter

  • How To Cook:
    1. Chop livers, press through a sieve, and then combine with roll or breadcrumbs.

    2. Cream egg yolks and butter, add to liver mixture, season to taste and mix thoroughly.

    3. Fold in stiffly beaten egg whites and spoon the mixture into well-greased muffin tins.

    4. Cover with greased greaseproof paper and bake in a moderate oven (375°) for about 30 minutes.

    NOTE:
        Serve as a side dish with a sharp sauce.
