Mazarin Cake

What You Need:
  • 7 oz butter or margarine
  • 4 oz sugar
  • 4 oz minced blanched almonds
  • 2 oz icing sugar
  • 1 egg yolk
  • 2 eggs
  • 4 oz flour
  • Green coloring

  • How To Cook:
    1. Cream 4 oz. of the fat with the icing sugar until light and add the egg yolk and flour.

    2. The mixture should be worked until it is smooth dough; if necessary, add a very little extra flour.

    3. Put in a cool place for at least 1 hour, then toll out and use to line a greased pie plate.

    4. Make a filling by creaming the remaining fat and sugar, adding the almonds and eggs and tinting carefully with a little green coloring.

    5. Put into the prepared case, spreading it evenly, and bake in a slow oven (300°F) for ˝ hour.

    6. When cold, decorate with sieved icing sugar or with glace icing.

    TIP:
        Small 'mazarins' may be made in individual tartlet cases; bake in a moderate oven (375°F) for 20 minutes.
