Potato Pancakes

This is the main dish of the poorer community all over Poland, and indeed in many other parts of Europe. In Poland these pancakes are eaten with sour cream, but they are equally good served at breakfast with fried bacon, or as a sweet pancake with jam or fruit.

What You Need: |

|
Large potatoes
Salt and pepper
Flour
Milk
Lard
|

How To Cook: |
|
|
1. Peel, wash and grate some large potatoes, then leave them for a short time to drain.
|
2. To each cupful of grated potato add 1 level teaspoon salt, some pepper, ˝ cupful flour and enough milk to make a fairly stiff batter.
|
3. Cut into rounds about ˝ inch thick and fry in hot lard, turning the cakes when one side is browned.
|
4. Serve at once.
