What You Need: |

2 cups seedless raisins
Grated rind of 1 lemon
1 cup sugar
2 cups unpeeled almonds, grated or chopped very fine
1 whole egg and 1 egg yolk, lightly beaten
Rice paper

How To Cook: |
|
|
1. Combine all the ingredients.
|
2. Pour into a shallow cake tin lined with rice paper and bake in a very slow oven (250°F) until lightly done on top 20 - 25 minutes.
|
3. This cake can be iced if desired.
