How To Cook: |

1. Prepare the turkey for roasting; cook the giblets for 15 minutes in boiling salted water, drain and mince, together with the pork and ham.

2. Chop the onion and fry it slowly in the olive oil, add the minced meats, stoned olives, spices and seasonings, and continue cooking for 5 minutes.

3. Add this mixture to the breadcrumbs, stir well, and bind with the egg yolks, then leave to get quite cold.

4. Stuff the turkey, truss for roasting, shaping it carefully, and roast in a moderate oven (350°F) for 1½ - 2 hours, basting at intervals, until the flesh is tender when tested.
