Rolled Fish Fillets With Lemon Sauce

What You Need: |

1˝ pound fillets of cod, haddock or flounder
Court-bouillon
Shrimps, dill or parsley to garnish
Lemon sauce

How To Cook: |
|
|
1. If the fillets are large, divide into convenient portions; roll them up and fasten with a cocktail stick, put in a shallow saucepan, cover with hot court-bouillon and cover the pan, then simmer for about 10-15 minutes.

2. Put the fish on a hot dish, removing the cocktail sticks, pour the hot sauce over and garnish.

3. Serve with lemon wedges and boiled potatoes.

TIP:
|
Alternatively, instead of using court-bouillon, pour over the fish the juice of ˝ a lemon mixed with 2-3 tablespoons water and dot with 1 tablespoon butter shaved into small pieces.
