Sailor's Beef

What You Need:
  • 1 pound chuck steak
  • Salt and pepper
  • 1˝ pound potatoes
  • 1 - 2 cups boiling water
  • 2 tablespoons butter
  • Chopped parsley
  • 2 - 3 sliced onions

  • How To Cook:
    1. Wipe the meat, cut into ˝-inch slices and beat, with a wooden spoon or something similar.

    2. Peel the potatoes and slice thickly.

    3. Heat the butter and saute the onions, then brown the meat slices.

    4. Put alternate layers of potatoes, meat and onions into a casserole, seasoning each layer and finishing with potatoes.

    5. Pour a little boiling water into the pan in which the meat and onions were fried, stir well and pour this liquor into the casserole, with just sufficient plain water to cover the contents.

    6. Cover and bake in a moderate oven (375°F) for 1 - 1˝ hour, or until the meat is tender.

    7. Sprinkle with parsley and serve from the casserole.

    To Serve: 4 - 6
