How To Cook: |

1. Soak salt dry cod overnight, cook it the following day and shred finely.
|
2. Boil potatoes, rub through a fine sieve and add to the cod, with egg yolks.
|
3. Beat the egg whites stiffly and add to the mixture, blending well.
|
4. Fry till golden-brown in a very hot deep fat, dropping the mixture in from a tablespoon.
|
5. Serve with black olives and a fresh green salad.
