What You Need: |

1 pound salt cod
1 large onion, finely chopped
2 garlic cloves, chopped
2 tablespoons olive oil
Cayenne
2 tomatoes, chopped
1 onion, thinly sliced
1 sprig of parsley
1 sprig of celery
2 egg yolks, beaten

How To Cook: |

|
1. Soak the codfish for 24 hours, changing the water often.
|
2. Parboil it for 10-15 minutes and cut into convenient pieces, removing the bones.
|
3. Fry the onion and garlic in the oil until light brown and tender; add the cayenne, tomatoes, onion, parsley and celery, pour in 1˝ cups boiling water and simmer for a few minutes.
|
4. Put in the pieces of fish, baste with the mixture, and then simmer gently.
|
5. When the fish is tender, take from the heat and pour in the beaten egg yolks at several different places.
|
6. Shake the pan gently to mix, and then slide the contents of the pan carefully into a deep hot platter.
