| How To Cook: |

	1. Cream the yeast with 1 teaspoon of the sugar.

	2. Melt the butter, add the milk and warm to blood heat.

	3. Pour the milk and butter into a mixing bowl with the creamed yeast, then add the flour, salt and sugar gradually, beating thoroughly until the dough is smooth and comes away from the sides of the basin.

	4. Leave to rise in a warm place, covered with a cloth, for 30 minutes.

	5. Shape into buns and leave to prove in a warm place for 10 minutes, then brush with beaten egg yolk and bake in a hot oven (450°F) for 10-15 minutes.

	6. Cool on a rack.

	7. Mix together the ground almonds, icing sugar and egg white.
  
 | 
	8. When the buns are cold, cut off a small circle from the top of each to make a lid, scoop out the bun mixture from the centre of the buns and stir this into the almond mixture, adding a little milk if necessary.

	9. Put this filling back into the buns, add a layer of whipped cream on the top and then cover with the lids.

	10. Dust with icing sugar.

	11. Just before serving, pour a mixture of milk, sugar and cinnamon over and round the buns.
