Spice Cake
(Mjuk Pepparkaka)
What You Need:
  • 3 eggs
  • 2 teaspoons ground ginger
  • 9 oz caster sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons sour cream
  • 1 teaspoon bicarbonate of soda
  • 4 oz butter
  • 2 rounded tablespoons orange marmalade
  • 2 oz chopped blanched almonds
  • 9 oz flour
  • Fresh breadcrumbs

  • How To Cook:
    1. Beat together the eggs and sugar till light and pale in color.

    2. Fold in the cream, softened butter and marmalade and the flour sifted together with the spices and the bicarbonate of soda.

    3. Stir in the almonds.

    4. Dust with breadcrumbs a greased, loose-bottomed, spring-clip cake tin, 8 - 9 inches in diameter, then spoon in the cake mixture.

    5. Bake in a moderate oven (350°F) for 1 - 1¼ hours.

    6. Do not open the oven door for at least 15 minutes, then test with a skewer for readiness.

    7. Cut next day.

    To Make: 1 cake
