Spinach With Sardines
(Espinafre Con Sardinhas)

What You Need: |

1 large tin of sardines
2 tablespoons onion juice
2 cups cooked spinach, chopped
1 hard-boiled egg
¼ teaspoon pepper
½ cup breadcrumbs
Salt
Juice of ½ lemon
Butter

How To Cook: |
|
|
1. Skin, bone and chop the sardines; mix with the spinach, breadcrumbs, lemon and onion juice, a little of the spinach liquor, the chopped egg white and half the chopped yolk; season to taste.

2. Put in a buttered baking dish; sprinkle the remaining egg yolk over the top and dot with butter.
|
3. Bake for 15 minutes in a moderate oven (350°F).
