How To Cook: |

1. Sieve together the flour, baking powder and salt.

2. Cream the butter and gradually add the sugar, beating until very light and fluffy.
|
3. Add the egg yolk and almond essence, beating until well blended.
|
4. Gradually add the flour mixture, beating just until well mixed.
|
5. Wrap the dough in waxed paper and refrigerate until easy to handle - about ½ hour.
|
6. Meanwhile, start heating the oven to moderate (350°F).
|
7. Put the dough into a biscuits press fitted with a star disc, and then force it on to a cold ungreased baking tray into "0", "S" and "U" shapes.

8. Bake for 8 - 10 minutes or until the edges are golden brown.
