Stuffed Eggs

What You Need: |

4 hard-boiled eggs
5 tablespoons butter
10 anchovy fillets
Stuffed olives, tomato, and anchovy fillets to garnish
Salt
Lettuce
White pepper

How To Cook: |
|
|
1. Cut the eggs in half crosswise or lengthwise, remove the yolks carefully, and put the whites aside.
|
2. Sieve the egg yolks, butter and anchovies, stir until smooth, and season to taste.
|
3. Refill the egg whites with this mixture, forcing it through a pastry tube.
|
4. Decorate each egg with a slice of stuffed olive, and place on a bed of lettuce.
|
5. Garnish with slices of tomato and anchovy fillets, or as desired.
