Veal Bigos
What You Need:
  • 3 green apples
  • ˝ cup soup stock
  • 2 tablespoons butter
  • Sugar and salt to taste
  • 1 tablespoon flour
  • 3 cups diced cooked veal

  • How To Cook:
    1. Core and pare the apples and just cover with water.

    2. Allow to boil up once.

    3. Blend the butter and flour without browning, dilute with ˝ cup soup stock, and combine with apples and water, add sugar to taste, and add meat to the sauce.

    4. Simmer tightly covered for about 10 minutes.

    To Serve: 4 - 6
